Thai Green Curry Pea Soup

Spicy thai green curry pea soup that is full of flavour and only requires a handful of ingredients! It’s warming, creamy, flavourful and perfect for a quick lunch or dinner!

This pea soup recipe is so straight forward and you probably already have the ingredients on hand!

All you’ll need is onion, garlic, frozen peas, thai green curry paste, coconut milk and lime!

I use shop bought thai green curry paste for ease but feel free to make your own if you prefer!

The great thing about using frozen peas is that you can make this any time of the year and probably always have some in your freezer!

It is also a great way to get some veggies into your day or sneak them in for fussy eaters!

This soup is inspired by a soup I sometimes get from the supermarket and I never would have thought of this combo otherwise!

The peas and green curry paste work so perfectly together! It is also inspired by my thai sweet potato and carrot soup which so many of you have made and loved!

As you can see it turns into this beautiful green colour and not only is it so pretty to look at it is really healthy too!

This soup has a nice kick to it but if you can’t handle much spice just use less curry paste.

I use 2 tbsp as I like it spicy but you may need to adjust this depending on how spicy the paste you are using is.

I buy the Blue Dragon curry paste pots as these are also vegan, so make sure you check the ingredients and that it doesn’t contain fish.

The toppings are optional but I topped mine with some fresh green chilli, coriander, coconut flakes and some coconut cream drizzles!

It definitely makes it look super pretty and would look great for a dinner party or for guests!

I also served some toasted sourdough on the side with some vegan butter because I love toasted bread with soup but it is delicious on it’s own too!

Thai Green Curry Pea Soup

Fragrant, flavourful and creamy vegan thai green curry pea soup. It only requires a handful of ingredients and is perfect for a quick lunch or dinner!

Ingredients

  • 1 red onion
  • 2 garlic cloves
  • 5 cups frozen peas
  • 2 tbsp thai green curry paste*
  • 1 tin / 400ml full fat coconut milk
  • 400ml water
  • 1 lime

Toppings (optional)

  • 2 green chillis
  • Handful of fresh coriander
  • Handful of coconut flakes
  • 4 tbsp Coconut milk/vegan cream

Instructions

  1. Finely cop the onion and fry in a large saucepan with some oil. After a few minutes, add the crushed garlic and fry for a further couple of minutes until soft.
  2. Next add the peas, green curry paste, coconut milk and water (fill up the empty coconut milk tin with water and add).
  3. Bring this to a gentle simmer and leave for about 5 minutes until hot.
  4. Using a hand blender or food processor blitz until smooth. Taste and season with salt and pepper and add the juice of the lime. If you find that it is too spicy add some extra coconut milk.
  5. Serve and top with some fresh green chilli, coriander, coconut flakes and drizzle of coconut milk or vegan cream.
  6. The soup will keep in the fridge for 2-3 days or you can freeze it.

Notes

I use the Blue Dragon thai green curry paste pot and find this to have the right amount of spice. However you may need to add less/more depending how spicy the one you are using is! Check the one you are buying is vegan as some contain fish.

Hi Libby, sorry for the confusion, there is no cholesterol in the recipe (or any vegan recipe!). The nutrition calculator sometimes gets confused by vegan alternatives like cream and I must have missed it! Thanks for letting me know, Tamsin xo
