Cut caulifower into bite sized florets.

Fry onion, garlic and ginger until soft. Add spices and cook until fragrant. Add tomatoes, coconut milk and stock. Bring to simmer.

Blend sauce and return to the pan. Add cauliflower and simmer for 10 minutes. Then add chickpeas and simmer for 5 minutes.

Garnish with fresh coriander, chilli and serve with your favourite sides!
