Chewy vegan chocolate chip cookies with a decadent salted caramel sauce.
It was clear that you guys loved the vegan salted caramel I posted last week and there was only one recipe that came to mind when incorporating it. COOKIES.
Because cookies are like my all time fav and this is now my third cookie recipe on the blog. And quite possibly, the best one yet.
The salted caramel pairs so nicely with the melty chocolate chips and slightly crunchy cookie exterior.
Chocolate and caramel are a match made in heaven and I am so excited to share this recipe with you all.
In case you missed my salted caramel recipe – it is 4 ingredients and it is the best vegan caramel I have ever tasted. All you need is coconut milk, light brown sugar, vanilla and sea salt flakes.
It comes together in 25 minutes and is great to have stored in the fridge for drizzling on puddings. Of course if you just want regular caramel leave out the salt, I won’t mind.
The recipe for these chocolate cookies originates from my double chocolate chip cookies. This time I have gone for a chocolate cookie dough and vegan milk chocolate chips.
Not only is this recipe delicious but these cookies come together in 25 minutes, a little longer if you need to make the caramel.
There is no need to chill the dough just mix the ingredients, roll into balls and place in the oven.
These cookies are best eaten fresh out the oven when they are still warm. There aren’t many things better than a warm, melty chocolate cookie.
So where does the salted caramel come into the recipe? I tested this a few ways but the easiest and tastiest method was to plop half a teaspoon of the caramel on top of the cookies when they are warm out the oven.
It’ll slowly melt and cover the cookie in this luscious sea of caramel.

Chocolate Chip Salted Caramel Cookies
Perfectly chewy vegan chocolate chip cookies with puddles of salted caramel. They are sweet, salty, gooey and totally addictive.
Ingredients
- 115g vegan butter
- 200g light brown sugar
- 1 tsp baking powder
- 1 tbsp arrowroot powder
- 1 tbsp water
- 180g plain flour
- 1 tsp vanilla bean paste
- 3 tbsp / 25g cocoa powder
- 100g vegan milk chocolate
- 4 tbsp vegan salted caramel
Instructions
- Preheat the oven to 180C/350F.
- Make the vegan caramel if you haven't already.
- Cream the sugar and butter with an electric whisk until it is creamy and soft.
- Mix the arrowroot and water in a cup and then add with the vanilla bean paste and stir.
- Sift the baking powder and flour into the bowl, and fold. Then sift in the cocoa powder and stir. You may find it easier to use your hands to mix.
- If you are using chocolate bars, cut into smallish chunks and add. Stir with a wooden spoon so they are evenly distributed.
- Line two large baking trays with baking paper.
- Divide the mixture in half, and then half again so that you have 4 equal parts. Then divide each part into 4 golf sized balls. You should make 16 in total.
- Place them onto the baking paper making sure to leave enough room for each to spread. Gently push them down.
- Place in the oven for 10-12 minutes. They may still look soft and gooey in the middle but don't be tempted to leave them in longer. They will harden when cooling and give that perfect gooey texture.
- After a few minutes out the oven, place about half a teaspoon of vegan caramel on top of each cookie.
- For best results eat on the same day but they will keep for 2-3 days in an airtight container.
Notes
I used Sainsburys free from milk chocolate, Neilsen-Massey vanilla bean paste and Vitalite vegan spread.
You can sub the milk chocolate for dark chocolate, I would recommend 70%.

Hi Pat, thanks for your comment. The arrowroot helps bind the cookies and adds chewiness. I have made them without but they don't hold together quite as well so I do recommend adding it (or cornflour). Thanks, Tamsin xo

Does the caramel harden quickly? Would like to serve for a party but would need to place in a jar and trying to avoid a gooey mess. :)
